Healthy Weeknight Meals

Cooking can sometimes feel stressful at the end of a busy day. It’s often tempting to throw a ready meal in the oven or go thru McDonald’s or Taco Smell(thanks Mom for the visual with that one) But preparing a simple and healthy family meal doesn’t have to be time-consuming. Here’s one I make often and my family loves!

Okra?!? Yes! It starts with Okra! Even my most picky eater has learned to accept okra. We won’t name names, but it just might be my husband(shhh- don’t tell him I told you) 😉

Does your husband hate soup as much as mine? With just a few simple and cheap things, you can make a hearty and filling soup! I’m not great with recipes because I just throw things in and create a meal but I’ll try!

  • Half a bag of frozen okra
  • A bag of frozen green peppers and onions
  • A few handfuls of spinach
  • Some bone broth(I just use 2 containers per 4 cans of lentils
  • Cans of lentils. I do 4 and it’s enough for 3-4 meals.
  • Seasonings of choice! I’ve done anything from taco seasonings to chili seasoning to simply some onion powder and smoked paprika! It’s all up to you

You’re first going to put your lentils and broth in a pot- pick a decent size one! Dump in the peppers and onions and turn the whole thing on to medium/ medium high.

Next, in a blender or food processor, dump in some okra(I do half a bag but you could use more or less. The more you use the thicker your soup will be.) Make sure to add a little water or extra broth(or even a jar of salsa) to this!

Blend for about 15 seconds or until partially blended. May not even be this long for those of you who have better blenders. Mine is a Walmart cheap model! Once the okra starts to be blended, add your spinach. Blend until it is all liquid. This may take some stirring.

Once you have your “green junk” as I call it, dump it in the pot with the lentils and broth! It’ll seem nasty at first but once it all combines- Yummy!!

We like to have this with a slice of sprouted bread or homemade spelt rolls(if I’m feeling productive 😂)
